Butternut Squash French Fries

Who here loves French Fries, guys?  Trick question right?  For all you guys who can't live without this guilty pleasure I want to share a healthier alternative. I'm talking about Butternut Squash “French Fries” here. Super easy to make!

I love the taste of these fries plus knowing I get all the amazing health benefits of butternut squash makes me want to munch on them all day and I sure can do that because they are low in calories, yet surprisingly filling.  Butternut squash is one of the most nutritious and healthiest vegetables you can eat! It is rich in vitamins, minerals and antioxidants as well as significant amounts of digestive fiber.

One cup of butternut squash provides 437% percent of your vitamin A needs for the day, as well as 52% of Vitamin C and 10% or more of Vitamin E, Thiamin, Niacin, Vitamin B-6, Folate, Pantothenic Acid, Magnesium and Manganese. How awesome!

OK, here is my recipe, no cooking school required!

Ingredients:

  • Coconut oil
  • Butternut squash
  • Sea salt
  • Black pepper (optional)

Directions:

  1. Peel the squash. For the rounded body, cut in half lengthwise and remove the seeds and strings. Cut the rounded piece into short French Fries. Try to cut the fries into similar widths so the baking time will be the same for all pieces.
  2. Preheat oven to 400°F.
  3. Take a big spoon of coconut oil in your hand and get coconut oil on every single fry. Place on a large cookie sheet in a single layer spreading them out so they don't touch.
  4. Bake for 20 minutes and flip fries to the other side, bake another 20 minutes. When its done, sprinkle some sea salt on top!  Season with pepper if you like more flavor.
