Russian Sauerkraut Recipe

Russian style tasty raw PROBIOTIC sauerkraut has nothing to do with soggy, commercial sauerkraut you see on fast food hotdogs or buy in the supermarket. This sauerkraut is a powerful source of PROBIOTICS and ENZYMES.  You'll be surprised how easy it is to make this yourself, and you can sneak a healthy topping on your husband's hotdogs!

Ingredients:

  • 1.5 kg of Cabbage
  • 2 Carrots
  • 1/8 cup of Sea salt

Directions:

  1. Take some of the leafs of the cabbage off, wash them and set them aside. These leaves will be used to cover the rest in the jar. Slice the rest of the cabbage to the thickness you see in commercial sauerkraut.
  2. Grate carrots. Mix cabbage, carrots and salt together in a bowl.
  3. Apply pressure once well mixed, this will help the mixture absorb the salt.
  4. Set your jar in a bowl or shallow container to catch any overflow from the next step.
  5. Pack the final mixture into the jar layer by layer to make sure it's a tight fit. Use the cabbage leaves you set aside earlier at the top of the jar to make sure everything is pressed together to marinate.
  6. Cover the jar with the lid but do not tighten it, or cover with cheesecloth and rubber band. It needs to breath during fermentation. Keep near 70 degrees, about room temperature, for three days.
  7. Each day remove top and punch a hole down through the entire mix, a chopstick is perfect for this.
  8. After three days, make sure it has reached a delicious tangy flavor. If it's ready you can store it in the refrigerator, tightly sealed with a lid, to stay fresh.
